Back to work!

Hello everyone, I am back to 100%! I feel awesome!!! I hate being sick, especially when it involves an upset stomach and I can't eat.

Honestly, my mind definitely was not with it either when it came to meal planning either. I was in no mood to cook last night. I had my last tub of Daisy Cottage Cheese that I needed to finish off soon so I made a bunch of cottage cheese recipes. I will be back on track tomorrow.

Breakfast was Apple Cinnamon Cottage Cheese and Oats:

- 1/2 cup Nature's Path Oats
- 1/2 cup Daisy Cottage Cheese Align Left
- Apple
- cinnamon
- stevia

I let the cottage cheese, stevia, oats and cinnamon sit overnight in fridge. Added chopped apple in the morning.



WORKOUT TIME!
- ran for 40 minutes on the treadmill (about 4.10 miles)
- lifted arms for the first time in 4 days!!!!!! My arms felt ok. I lifted a lot, but they felt like jello. I guess that's what four days off in a row can do to you.

POST WORKOUT MEAL: Cinnamon Cottage Cheese and Bananas

- 1/2 cup Daisy cottage cheese
- cinnamon
- stevia
- banana



Next was Peanut Butter and Cottage Cheese

- 1/2 cup Daisy Cottage Cheese
- 1 tablespoon krema products peanut butter
- stevia

OK, so I COMPLETELY miscounted my meals last night when I was planning for today. As I was leaving for work, I grabbed a bag of these Tings from Pirate's Booty that I have been meaning to try. These were awesomely delicious! One bag has 320 calories, 18 grams fat, 32 grams carbs, 0 grams sugar, 2 grams protein.

Next was Chocolate Peanut Butter and Cottage Cheese

- 1/2 cup Daisy Cottage Cheese
- 1 teaspoon cocoa powder
- 1 tablespoon krema products peanut butter
- stevia



When I got home from work I snacked on a Dr. Kracker Cracker while I cooked dinner.

And dinner was the usual :) Stir-Fry Teriyaki Veggies with Krema Products Peanut Butter.


- veggies (red and green cabbage, broccoli, carrots and onion)
- kikkoman teriyaki sauce
- 2 tablespoons Krema Products Crunchy Peanut butter




Dessert was a FROZEN BANANA!

I am now watching MY FAVORITE TV SHOW: Law and Order: SVU. I am off to do some cooking, call my sister and doing some texting and blogging. Hope everyone is having a good night!

Cashew and Cashew Nut Butter StirFry

Ingredients:
- cabbages (red, yellow, napa)
- carrots
- celery
- onion
- 1/2 ounce cashews
- tablespoon krema products cashew nut butter
- soy sauce

Directions: cook veggies in soy sauce. Remove from heat and top with cashews and cashew nut butter.

Cashew Nut Butter and Macadamia Nut Stir Fry

Note: This was just awesome. My two faves: cashews and macadamia nuts.

Ingredients:
- cabbages: red, green, napa
- carrot
- celery
- onion
- broccoli
- tablespoon krema products cashew butter
-1/2 ounce macadamia nuts
- teriyaki sauce (kikkoman)

Directiond: Saute onions and carrots in teriyaki sauce. Add rest of veggies. Remove from heat and top with cashew butter and macadamia nuts.

Somersault Cookie and Peanut Butter Stir Fry

Note: These somersault cookies are so delicious. My family ate the two large bags sent to me in one night, but I managed to save two smaller portion sized bags. These tasted awesome in the stir fry, since they are crunchy and salty, but not sweet.

Ingredients:
- cabbages: red, green, napa
- onion
- carrot
- celery
- onion
- soy sauce
- 20 grams somersault cookies
- tablespoon krema products peanut butter

Directions: saute onion and carrot in soy sauce. Add other veggies. Top with crushed somersault cookies and drizzle with peanut butter.

Cashew Flax Stir Fry

Ingredients:
- red cabbage
- green cabbage
- carrot
- onion
- celery
- 1.5 tablespoons krema products cashew nut butter
- 1 tablespoon flaxseed meal
- soy sauce

Directions: saute onions in soy sauce. Add carrots, then rest of veggies. once cooked, remove from heat and top with cashew butter and flax.




Apple Walnut Coleslaw/Salad

Ingredients:
- napa cabbage
- carrot
- apple
- 1 oz walnuts, crushed
- green onion
- dressing: apple cider vinegar, balsamic vinegar, dijon mustard and truvia

Chickpea and Almond Butter Stir Fry

Ingredients:
- cabbages: red and napa
- carrot
- celery
- green onion
- 1/4 cup garbanzo beans
-1 tablespoon krema products almond butter

Directions: Cook veggies in kikkoman teriyaki sauce. Remove from heat and top with chick peas and almond butter.



Almond Meal and Almond Butter Stir Fry

Note: Almond meal is usually used in baking, but I liked it as a topping on my stir fry.

Ingredients:
- cabbages: red, green and napa
- onion
- carrots
- 1 tablespoon krema products almond butter
- 15 grams almond meal
- celery
- green onion
- teriyaki sauce (kikkoman)

Directions: Cook onion and carrot. Then add the softer vegetables and cook. Once all cooked, remove from heat and sprinkle with almond meal and almond butter.



Pistachio and Peanut Butter Stir Fry

Note: Another seed and nut butter stir fry...

Ingredients:
- cabbages: red, green and napa
- onion
- carrots
- 1 ounce pistachios
- 1 tablespoon krema products peanut butter
- soy sauce

Directions: saute onions in soy sauce. Add chopped carrot. Then cabbages. Remove from heat and top with pistachios and drizzle peanut butter over it.

Teriyaki Sesame Seed Peanut Stir Fry

Note: Simple and easy.

Ingredients:
- cabbages (napa, red and green)
- carrots
- teriyaki sauce
- sesame seed peanuts

Directions: Cook veggies in teriyaki sauce. Remove from heat and top with the sesame peanuts.

Teriyaki Tuna and Almond Cabbage Stir Fry

Note: This made a delicious asian style salad. You can sub soy sauce for the teriyaki. Thanks to Starkist for sending me their tuna salad pouches.

Ingredients:
- napa cabbage
- red cabbage
- starkist tuna salad pouch
- carrot
- yellow onion
- teriyaki sauce
- 1/2 ounce almonds

Directions Cook onion in teriyaki sauce. Add carrots. Then add napa and red cabbage. Remove from heat and top with tuna and almonds.

Ginger Shrimp Almond Nutbutter Napa Cabbage Stir fry

Note: And the reapparance of bean sprouts :)

Ingredients:
- Napa Cabbage
- 1 cup bean sprouts
- carrot
- onion
- 3 oz shrimp
- tablespoon krema products almond butter
- soy sauce
- teaspoon minced ginger

Directions: Cook onion and ginger in non stick skillet in soy sauce. Add Carrot. Then shrimp. Then napa cabbage and bean sprouts. Remove from heat and top with almond butter.

Spicy Smoked Almond Cabbage Stir fry

Note: Wow, this was awesome. You all know by now I love my nut butter stir fries. This one was smoky from the smoked almond and the cumin and paprika, and spicy from the peanut butter.

Ingredients:
- cabbages
- carrot
- yellow onion
- one tablespoon krema products spicy peanut butter
- 1/2 ounce Go nuts smoked almonds
- paprika
- cumin

Directions: saute onions in spices. Add diced carrot. then cabbages. Remove from heat. Drizzle peanut butter on top and then smoked almonds.

Spicy Chicken and PB Coleslaw

Note: You have got to try Krema Products Hot and Spicy Peanut Butter! It was awesome! I mixed it with some chicken and made a spicy coleslaw.

Ingredients:
- cabbages (red and green)

- tablespoon krema products peanut butter
- 3 oz chicken
- dressing: truvia and rice vinegar

Peanut Butter and Coconut Oil Stir Fry

Note: Still craving my fats, I made a stir fry with peanut butter and coconut oil.

Ingredients:
- cabbages (red and yellow)
- carrot
- onion
- 1/2 tablespoon coconut oil
- tablespoon coconut
- tablespoon krema products peanut butter

Directions: Satue onions in coconut oil. Add carrots, then cabbages. Remove from heat and top with peanut butter and coconut flakes.



Artichoke Burger and Tomato Coleslaw

Note: Using the delicious artichoke burgers Five Star Foodies sent me, I made a coleslaw with tomatoes. My dressing was the usual balsamic vinegar, dijon mustard and truvia.

Ingredients:
- Five Star Foodies artichoke burger
- cabbages: red and green
- carrot
- tomato
- onion
- dressing: balsamic vinegar, truvia, dijon mustard

Peanut Coleslaw

Note: This was delicious. If you run out of the peanut butter sauce as a topping, I mix rice wine vinegar with truvia.

Ingredients:
- cabbages (red and green)
- carrots
- 16 grams peanuts
- 1 tablespoon krema products peanut butter
- dressing: rice wine vinegar and truvia mixed

Directions:
- make coleslaw out of veggies. Top with peanuts and peanut butter.

Sweet Curried Sunflower Coleslaw

Note: All the dressing for this salad was Stonyfield farms Oikos greek yogurt, curry powder and truvia. It makes a great dressing.

Ingredients:
- cabbages
- carrots
- homemade sweet curry sunflower seeds
- dressing: stonyfield farms oikos greek yogurt, curry powder and truvia

Directions: Make coleslaw out of cabbages and carrots. Top with sunflwoer seeds and dressing.



Chicken and Peach Coleslaw

Note: Like the cottage cheese/dried fruit mix, I also like refridgerating dried fruit in yogurt because it also "plumps" up as well.

Ingredients:
- cabbages
- carrots
- 3 oz chicken
- tablespoon of Oikos non fat plain greek yogurt
- 30 grams dried peaches

Directions: Make coleslaw out of cabbages and carrots. mix diced chicken, dried fruit and peaches. Top on coleslaw. I also used balsamic vinegar/truvia mix as extra dressing.
