Zucchini "spaghetti"

NOTE: I am loving the zucchini noodles and my new vegan cheese :)

Ingredients:
- Zucchini
- 1 ounce block of vegan cheese from "Follow Your Heart"
- tomato sauce
- 3 ounces Chicken
- Benson's gourmet seasoning

Directions: Spiralize zucchini. Cook chicken in tomato sauce. Add zucchini and cook some more. Remove from heat and mix in cubed vegan cheese. Top with seasoning.






Peanut butter chicken "zucchini spaghetti"

Note: My supermom bought me a spiralizer for my birthday. Thanks Mom. I am addicted to zucchini spaghetti.

Ingredients:
- Zucchini
- 30 grams peanut flour
- soy sauce
- 3 ounces chicken

Directions:
spiralize zucchini. In a pan, cook chicken. Add zucchini and soy sauce. Add in zucchini until cooked. Once cooked, removed from heat and thoroughly mix peanut flour.

Ginger Peanut Butter Chicken and Bok Choy

Note: This is one of my favorite stir-fries I made in a while.

Ingredients:
- 3 ounces chicken
- 1 tablespoon peanut butter
- ginger powder
- soy sauce
- bok choy

Directions: Wash and cut bok choy. Stir fry. Add chicken, soy sauce and ginger. Once all cooked, top with peanut butter.

Ginger Soy PB Chicken

NOTE: this is one of my quickest go to meals (chicken is pre-cooked and broccoli is frozen).... and you can't go wrong with peanut butter :) I love ginger too since it soothes my stomach. I usually just throw it on the stove when I get home and run around doing other things... and then it's ready!

Ingredients:
- 1 bag frozen broccoli
- 3 ounces chicken
- ginger powder
- soy sauce
- salt
- peanut butter (1 tablespoon)

Directions:
cook broccoli with soy sauce in non-stick pan. Add chicken and ginger and cook through. Remove from heat and drizzle pb on top.

Coconut Chicken and Noodles

Ingredients:
-one package shirataki noodles
- 1/2 tablespoon coconut oil
- 3 ounces chicken
- tablespoons unshredded coconut
- soy sauce
- red and green cabbage

Directions:
Wash, drain and pat dry noodles. (add salt to remove excess water). Heat up coconut oil in pan, throw in veggies, then noodles and chicken. Top with soy sauce.

Remove from heat and top with coconut.

I did it!!!

Note: So, I made my goal of running 18 miles Saturday and it felt good :) It has been over a year since I ran this much. Unfortunately, since I did it so early in the morning, it was all the treadmill because I hate running in the cold. I had to get up at 4:30. I broke it up into three pieces. I ran 9 miles, then 6 then 3 with food and water breaks in between (I drank water continuously, but couldn't get enough in except the breaks.



I started off the morning bright and early with french meadow cinnamon raisin bagel with 1 tablespoon better 'n peanut butter.





My running fuel: Kashi pumpkin spice flax bar and Clif white chocolate macadamia nut bar.





When I was done running, I was craving salt big time. I aways do. So, I made a sunshine burger topped with next generation dairy cheese, and sauteed tomato, peppers, onions and Don Sabrosa Salsa on the side.





I liked the combo so much, I made it again, this time I made an omelette. I subbed the burger for 4 egg whites.


- 4 egg whites
- next generation dairy cheese
- sauteed onions, peppers and tomatoes
- Don Sabrosa roasted garlic salsa




A couple of hours later, I had a salad with some chicken and next generation sharp cheddar cheese.



with a banana.



And then I made frozen bananas coated with almond meal. I cut a banana into slices, rolled it into some almond meal and froze it. Came out awesome :)



I went to dinner with my awesome boyfriend. We went to Minado's in Natick. It's a sushi buffet. It is the BEST sushi ever. I basically had two plates that looked like this.... yes, two plates :) and then some ice cream.

Friday, Friday, Friday!!!!

Hi Everyone! It's friday at 8:07 PM and my plan is to be in bed by 10PM. Do you think I can do it? I have been getting less than 5 hours of sleep and its starting to catch up... I am HOPEFULLY running 18 miles tomorrow and don't want to feel sleepy!

First of, I hope you all had a HAPPY FRIDAY! I had the best Friday. Everything just went well. And now I am relaxing and watching my favorite show: Law and Order: SVU. I should have been a detective, I am obsessed with the show.

OK, let's start off with the eats. I had a docs appointment early so I had to make something quick for breakfast. I couldn't decide between peanut butter and toast or toast with egg whites, so I topped one slice with each.

Breakfast
- one slice french meadow cinnamon raisin toast with better 'n peanut butter
- one slice french meadow cinnamon raisin toast topped with 2 scrambled egg whites.

HIT THE SPOT!



Workout:

- ran 4.30 miles. I felt just ok. Not awesome, but not like crap either. I got more motivated as I got into the run, but I think I was a bit sleepy, which I think made me feel not great.

- lifted arms. I really lifted good though. Not amazing, I feel like I don't push myself hard enough, but my arms felt it.

When I got to work, I snacked on one of these ZONE BAR INDULGENCE BARS. German chocolate cheesecake! This was awesome. These bars are so awesome, loaded with protein and all natural. 1 bar has 180 calories, 6 grams fat, 0 trans fats, 15 grams sugar, and 10 grams protein. This was MY LAST review of these bars and I HONESTLY believe these are some of the best tasting, high protein bars out there. Tastes like a candy bar. If you haven't tried it, I highly recommend you do.



Lunch 1 was crispy coconut chicken

- 3 oz purdue all natural chicken
- 1 egg whites
- 2 tablespoons coconut flakes (unsweetened organic)
- 1 teaspoon coconut oil
- 1 tablespoon coconut flour

- dip chicken in egg white, then coconut flour, then egg white again and then coconut flakes. Stir fry in oil. DELICIOUS!



I ate mine with some roasted eggplant.



Lunch 2 was Almond Meal "Breaded" Eggplant.


- 1/2 eggplant
- egg white
- 1/2 cup almond meal
- Don Sabrosa's roasted garlic salsa

Directions: cut eggplant into slices. dip in egg white, then almond meal. Bake in oven at 400 for about 15-20 minutes.



I used Don Sabrosa's roasted garlic salsa as a dip



Last was Artichoke Burger Stir Fry using the delicious artichoke burgers Five Star Foodies sent me. It was my last one :(

- veggies included: carrot, zucchini, summer squash
- Five Star Foodies artichoke burger
- Benson's seasonings
- Don Sabrosa's salsa



I snacked on a next generation cheese stick when I got home from work.

AND DINNER: MY FAVORITE! Krema Products Crunchy PB and Cashew Stir Fry.

- One tablespoon Krema Products Crunchy Peanut Butter
- veggies: onion, summer squash, cabbage, carrots
- kikkoman teriyaki sauce
- 1/2 ounce cashews

Salsa Day!

Today I was in salsa heaven! Thanks to Don Sabrosa's salsas. I told you I liked them :)

Breakfast was fluffy oatmeal egg whites with banana. I got this idea from Naomi at http://www.onefitfoodie.com/ Love her! My oats never look as good as hers. Did you see I used my new measureup bowl?

- 1/2 cup Nature's path oatmeal
- 3 egg whites
- cinnamon
- banana
- stevia

Directions: make oatmeal as usual. meanwhile, whip egg whites until fluffy, then fold them into oatmeal and nuke for like 2 more minutes. Top with cinnamon and sliced banana.



Workout:
- workout was ok. I felt good running, but wasn't in the mood to push myself. I am hoping saturday will be an 18 mile run, so I don't want to kill myself.

However, I lifted my lower body and felt awesome. My legs were aching.
- ran 4.10 miles on treadmill in 40 minutes
- lifted legs

I snacked on one of these. I LOVE Luna Bars. You can't go wrong with clif bar (who happens to also make luna bars). My favorite company.



A little later I had black beans and veggies topped with Don Sabrosa Black Bean and Corn Salsa.

- veggies: I used summer squash, zucchini, carrots and red pepper
- 1/4 cup black beans
- 2 tablespoon Don Sabrosa's



I also tried a new recipe: Almond Meal Crusted Chicken. It was so easy to make! Low carb!

- 3 ounces chicken, sliced thin
- 1 egg white
- 1/8 cup almond meal
- benson's seasonings (any seasonings will work)

Directions: Dip chicken in egg white and then almond meal/seasoning mix. Bake in oven at 350 for about 20 minutes. Ridiculously awesome :) I love almond meal.



I ate mine on top of a salad with Don Sabrosa's Roasted Blueberry, Peaches and Honey Salsa



My next meal was so Roasted Eggplant and Cheese Pasta.

- eggplant: cut in chunks and roasted at 400 for about 35 minutes
- 2 ounces of fiber gourmet pasta
- 1 ounce cabot 75% reduced fat sharp cheddar cheese
- 2 tablespoons Don Sabrosa's Roasted Garlic Salsa

Diections: Cook and drain pasta. Mix in roasted eggplant. Top with small chunks of cheese and mix so it gets melted. Top with salsa.




OK, dinner and snack to come later. I am hitting a salad bar now with my friend.

I LOVE, LOVE short work weeks. Tomorrow is Friday! :)

Flaky Day

Frozen bananas- the best all natual fat free dessert!
So, I will start with last night's snack. Frozen banana pop! The easiest dessert ever. No dirty comments, haha... However, this is the best frozen dessert... especially if you have kids! You can stick a 1/2 banana on a popsicle stick, put it in the freezer and give it to the kids later as a dessert. You can even dip it in sprinkles, peanut butter or chocolate.


This morning's breakfast was Chocolate Oatmeal Pancake with Banana:
- 2 egg whites
- stevia
- 1 teaspoon cocoa powder
Blend in bullet and cook on non-stick skillet. Add with sliced banana. Next time I will use 3 egg whites because it barely stuck together.
TODAY'S WORKOUT: AWESOME! I felt great! (made up for yesterday's pathetic workout)
- ran 4.60 miles in 40 minutes
- lifted arms
Lunch was Broccoli and Cheese Pasta:
- Broccoli
- 1 ounce sharp reduced fat 75% cabot cheese
Because Fiber Gourmet has 18 grams of fiber, this lunch was so filling!

Snack was Vegeterian Sloppy Joe's and Eggplant:
Remember that awesome company Five Star Foodies that I blogged about? They make awesome tasting vegeterian meals. I am a huge fan of their sloppy Joe's.
- Roasted Eggplant


Snack bars of the day:
Everlast Bar: Peanut butter chocolate crunch. These bars are delicious and all natural! I picked them up at the expo. One bar has 190 calories, 7 grams fat, 19 grams carbs, 11 grams sugar, 14 grams of protein, 4 grams of fiber,
Perfect Foods Bar: My LAST peanut butter flavor :( Seriously, if you are a nut butter addict, these bars are for you! They taste like a stick of peanut butter. SOO GOOD!


And last but not least: DINNER! Teriyaki Chicken and Peanut Butter Stir Fry

- 3 oz purdue all natural chicken
- 1 tablespoon krema products peanut butter
- veggies

OK, so you are probably wondering what my title has to do with anything? Today I had a flaky day. Not a snow-flakey day, it didn't snow in Boston. I made so many "flaky" mistakes today. I asked a really ridiculous obvious question to a co-worker that I was embarassed about... TWICE! and then I left my purse at work. Got to my parents house and then had NO idea where I left it. Luckily, I left it at work. But I had to go back at 7 PM to get it and I had no idea where I had it last... if I had left it in the bathroom.... or on my chair... it was an useasy feeling without my purse. I am one of those people who keeps their life in their purse! And I haven't lost a purse in 10 years....
On that note, I should get to bed early :)

Sunday Night Superbowl

Sunday Funday... OK, I have this weekly ritual. Every Sunday I get up at 8AM to go to my local farmers market and buy my fruits for the week. Why 8AM? Because the place is always jam-packed, especially on the weekends.

The name of the place is Russo's. They have RIDICULOUSLY cheap produce, dairy and meat and it's so frech. Check them out at http://www.russos.com/.

Today's first 3 meals are dedicated to Amy's Organics, who sent me a can of refried beans to sample. Thank you to Amy's Organics, the beans are awesome.

Meal 1: egg white, refried bean and veggie scramble with melted all natural low fat sargento cheese on top. I scrambled some egg whites and mixed with sauteed tomatoes, red onion and green pepper. I topped it with some Benson's all natural calypso spicy seasoning.



Meal 2: Huge garden Salad with Amy's refried beans, salsa, cheese and chicken.



Meal 3: Another refried bean, chicken and cheese bowl. I made it like my egg white bowl above, but subbed chicken instead.



Later on this afternoon, I had a frozen banana with cinnamon sprinkled on top. Frozen bananas are addicting!



AND Tonight's Dinner: Sushi! I went to New Ginza with my sweetheart. New Ginza is one of my fave local sushi restaurants. The employees are so nice. I got two orders of salmon sashimi, one order of tuna sashimi and we split a bowl of edamame. I love edamame.. with tons of soy sauce. Sorry, I didn;t take any pics :(

So, the person that parked in my spot... IS STILL in my spot. I had to park in the municipal lot tonight because my town doesn't allow over night parking, which stinks because i have to wake up at 6AM to run a few streets over to the lot to move my car. You know HOW cold it is in Boston at 6AM in the morning??? I would just feel really guilty if I get her towed, though. One more night and I am calling the towing company... I left a note on her car, but it looks like she hasn't left the apartment. I then called the police to call her (which they nicely did for me), but they couldn't get a hold of her. I also called the towing company to ask them not to tow my car, but they said they couldn't make any promises... I don't mean to complain, but I am exhausting all my options.... ughh...

superbowl sunday: well, I am not a fan of football, but my sweetheart is. The saints just stole the ball and it looks like they are now going to win, so I got to go cheer up the boyfriend.

Teriyaki Chicken and Oatmeal

Ingredients:
- Nature's Path Oatmeal
- teriyaki sauce
- 3 ounces chicken
- green onion

Directions: Cook oatmeal. Add cooked chicken and top with teriyaki sauce. Sprinkle sliced green onion on top.






Spicy Chicken and Oatmeal

Ingredients:
- 1 package of Nature's Path Organic Oatmeal
- 3 oz chicken
- veggies: tomato (deseeded), green pepper, red onion, green onion)
- benson's spicy seasoning (calypso)

Directions: Cook oatmeal. Add cooked veggies, chicken and benson's seasoning. Top with sliced green onion.



Curried Chicken and Oatmeal

Ingredients:
- packet of Nature's Path Organic Hot oatmeal
- 3 oz chicken
- curry powder
- sliced green onion

Directions: in a bowl, cook oatmeal. Add cooked chicken and top with curry powder and slices of green onion.

Low Carb "Spaghetti" with Tomato Sauce

Note: Using the bean sprouts as a sub for "spaghetti" and the tomato and kenzoil olive oil make a nice sauce. OK, OK, It's a stretch... but it still tasted good.

Ingredients:
- cup bean sprouts
- tomato
- 1 tablespoon kenzoil olive oil
- 2 ounces chicken

Directions: In a pan, cook tomato down so that it becomes soft. Add in chicken and bean sprouts and stir until beans are cooked and food is mixed.
